Keto Salmon Patties 🐟

2 tbsp Yellow onion (freshly grated)
12 oz Canned salmon (drained)
1 large Egg
115g/ 4 o.z cup Mayonnaise
30g/ 1.12 o.z Pork rinds (crushed)
3/4 tsp Italian seasoning
1 1/2 tsp Sea salt
1/2 tsp smoked paprika
1/4 tsp Black pepper
3 tbsp Olive oil
Combine all ingredients except olive oil in a bow. Mix until just combined, but don’t over mix.
Form mixture into 6 patties and place on a parchment-lined baking sheet. Patties will feel wet and sticky. Refrigerate for 30 minutes to firm up.
Heat the olive oil in a large skillet over medium heat. Add salmon patties to the skillet, and cook for 3-4 minutes, until golden brown on the bottom. Flip patties and cook for another 3-4 minutes, until browned on the other side.
